I am new to this board. It seems like everyone is very friendly!
I ran week 2 run 3 yesterday and am supposed to rest 2 days. Is it ok to start my week 3 a day earlier or is it really important to have the 2 days in between?

I think you have to listen to your body, everyone will be different. It also depends on your starting point. If you are starting from the couch it is best not to push to hard too soon, tho I think just walking as well in between is a very good way to improve fitness.
I was a regular gym goer that had taken some time out, so previous to starting this I would walk to work & back. Now 6 weeks later & now running Wk 4 I am able to do some gym sessions too.
